This is a super easy, simple dish for those of you that can eat red meat as part of your diet. It’s super clean too, and feel free to add rice if you need the carbs.
Ingredients (serves 2):
400g lamb strips
100g green beans, cut into 4cm lengths
1 red capsicum, cut into strips
1 garlic clove, crushed
1/4 cup oyster sauce
1/4 cup chopped mint
Heat a tablespoon of oil in a wok. Add the lamb (in batches if necessary) and cook for two minutes until brown. Remove meat and set aside.
Heat another tablespoon of oil and stir fry the beans and capsicum for 5 minutes, until browned and just tender, adding the garlic for the last 2 minutes of cooking.
Return lamb to wok with oyster sauce and mint. Stir to heat through.
